Danish Dessert!

Danish Dessert
1 cube butter melted
3 C rice krispies
1 C chopped pecans
1 1/4 C coconut
3/4 C brown sugar
1 1/2 gal vanilla ice cream
1 box of danish dessert strawberry



Mix together melted butter, rice krispies, nuts, coconut, and brown sugar in a 9 x 13" pan. 





 Bake at 300 for 15 min. Stir, then return to oven and bake another 15 minutes.






Let cool, then set half of mixture aside. Spread remaining half across bottom of pan.



Scoop ice cream (as flat as possible) and place over mixture. Make it as even as possible and spread as it softens.

Sprinkle remaining mixture over top of ice cream. Cover and return to freezer until hard. (2-3 hours)

Make sauce 15 minutes prior to serving. Follow recipe on box for fruit sauce. 
(this may be difficult to find.  Some stores have it, most don't.  Its found by the jello or pectin)






Cut into pieces and serve with warm sauce over the top!  





Enjoy! This is by far one of the best desserts ever! 

Spanish Rice

Spanish Rice
1 cups white rice
2 cups water
1 chicken bullion cubes
salt and pepper to taste
8 oz can tomato sauce
3 T oil
1/2 chopped onion (or 1/8 c minced dried onion)





Put oil in frying pan and add rice and onions. Cook on med to med-high and stir often.













Continue to cook and stir often until Golden brown



Add chicken bullion cube and salt and pepper to the 2 C water and heat until bullion cube is dissolved. 

  
Add to rice  



Add tomato sauce

Cover with lid and cook on med-low, stirring occationally until water is absorbed and rice it tender.














Add salt and pepper to taste and enjoy!

Chicken Roll Ups

This is one of our most favorite dinners.  I had this growing up and I'm not even sure where the recipe originated from, but it is yummy! I know there are lots of variations to this, but this is how I do it!


Chicken Roll Ups

2 packages crescent rolls (pillsbury works best)
1 cube butter melted and in a seperate bowl
1-2 cups italian bread crumbs also in seperate bowl
8 oz cream cheese softened
2T butter melted
cooked chicken (2 cans or 2 breasts cooked)
2 T Mrs. Dash (+ -)

Gravy sauce
2 cans cream of chicken soup
milk
Mrs. Dash


Preheat oven to 350

In bowl melt 2 T butter and soften cream cheese. Stir until creamy.  Add chicken and Mrs. Dash and mix together well. Set aside.

Open crescent rolls and lay out individually.  Press down with fingers spreading dough out making roll as big as possible without tearing a hole.


Scoop probably about 1/4 cup of the chicken mixture onto big end of crescent roll.

Then starting with the two corners of the roll at the big end, fold corners over mixture (kinda touching in middle) and continue rolling up.

Pinch ends together so roll completely covers chicken mixture.





Place rolled up chicken roll into the bowl of melted butter and cover completely.



Then place in bowl of italian bread crumbs and roll it around until completely covered.















Place on cookie sheet or stone and bake at 350 for 30 minutes.


While baking make gravy and heat up by combining

2 cans cream of chicken soup
or (1 can cream of chicken, &1 can cream of mushroom)
milk
Mrs. Dash.

in saucepan, add milk to cream of chicken soup until sauce is the thickness you prefer and add Mrs. dash to taste.






They should be somewhat golden brown, but not too brown!










Serve gravy sauce over rolls and enjoy!

Mixed Up Muffins

I've been doing a lot of pinning and trying different recipes on Pinterest lately and thought I would share some of our favorites so far!  Plus add some of my family favorite meals.  I've found as I search different recipes and try different ones, I seem to adjust and sometimes combine different ones. 

I was in search of some healthy muffins my kids can grab and eat in the morning and as an after school snack.  I love bran muffins so I was hoping my kids would too!  I made two different recipes and they definately had their favorite, so that is what I am posting now.

One recipe I found called for Chia seeds.  I was unfamilar with what chia seeds were so I looked it up and decided I needed to get some and add them in.  It has lots of fiber and omega-3 and is higher in antioxidant activity than blueberries!! This sounded good to me so I threw some in and you can't even taste them or know they are in the muffins! 

Mixed Up Muffins

1/2 c butter, softened
1/2 c brown sugar
2 large bananas, mashed
1 cup squash or zucchini (I grated, slightly cooked, then blended)
2 carrots grated
2 eggs beaten
1 c whole wheat (you can use white)
1/2 c oat bran
3 T chia seeds
1 tsp baking soda
1 tsp pumpkin pie spice
1/2 tsp salt

Preheat oven to 375 and grease 12 muffin cups or use liners.




Cream together butter and brown sugar until smooth. 





I like to grate zucchini and carrots and add.















 Put the measured leftovers in a ziplock bag and freeze for the next time you make muffins!
















Or if your kids are picky and don't like to see the veggies in the muffins, simply puree them. I blended the zucchini, carrots, and banana. You might want to add an extra 1/2 cup flour if you do it this way so your muffins aren't too moist.
















Combine flour, oat bran, baking soda, salt, chia seeds, and pumpkin seasoning and stir.








Slowly add to mixture. Mix it all up and scoop into muffin pan.









Bake 15-20 minutes or until toothpick comes out clean.  Cool in pans 10 minutes before removing.

Freeze any leftovers!

I thought I'd start a kitchen blog to post all my favorite recipes and add them to pinterest! Now that the kids are back in school, I've found myself in the kitchen trying lots of new recipes but find myself adjusting them a bit. This way I can add my version of them! Hope you enjoy.
